Patisserie Workshop
The penetration of bakeries in India is increasing owing to the affordable price and ready to eat nature of the products. The workshop demonstrated the preparation of patisserie and confectionery with focus on French presentation and garnishes. French terms in pastry products from petit four to petit gâteaux were explained. Students learnt about different types of sponges, cream, icing, frostings, flavors with velvet spray, glazed products and French tea cakes. The 12 hour upskilling hackathon of Butter Bliss to learn the nuances of pastry art was conducted by the department of BBA-HEM on August 14, 2024 at RR campus.
