Field visit to restaurant
Students visited an upmarket specialty Italian restaurant to understand the industry best practices and the distinct focus areas that made it a preferred dining place in the city. Students got an opportunity to understand the importance of high-quality ingredients, culinary techniques, and creative approaches to food presentation. They observed the artistry and craftsmanship involved in creating fine dining dishes. Analyzing a sophisticated menu, including the interpretation of culinary terms and descriptions helped them understand the cost structure of fine dining establishments, including menu pricing and service charges. The field visit was part of the project learning and assessment in culinary and service specialization.
